- Total destemming, followed by a cold pre-fermentation maceration of 3 days to preserve aromatic elegance.

- Fermentation in concrete tanks for 15 to 20 days, under controlled temperature (25–34 °C), with gentle punch-downs for a balanced extraction of tannins.

- Aging for 12 months in French oak barrels, including 15% new barrels, then blending and refinement in stainless steel tanks on fine lees for roundness and complexity.
