The House of Champagne AYALA, founded in 1860 by Edmond de Ayala, is recognized for its visionary spirit and excellence in champagne production. A pioneer of "dry champagne," it distinguished itself from the beginning with its innovative style.

Becoming a founding member of the Syndicat des Grandes Marques and receiving the Royal Warrant in 1908, AYALA experienced a golden age in the 1920s. Acquired by the Bollinger family in 2005, it has undergone significant modernization. Under the leadership of Hadrien Mouflard since 2012, it has asserted its identity around Chardonnay, investing in the vineyard and the cellar to improve the quality and uniqueness of its cuvées.

Today and for the past 10 years, the House has been working with high precision to develop the uniqueness and quality of its cuvees, strengthening the pillars that make up the AYALA style: the pure expression of Chardonnay, the unique diversity of the crus, custom blending, reserve wines, and low dosage.
