The history of the distillerie twelve whisky was born in 2014 from the common passion of two young French captivated by the landscapes of Aubrac, similar to those of Scotland. Their objective: to create from scratch a whisky produced solely from Aubrac products. To do this, they set up a brewery and distillery in the presbytery of Les Anges, in the heart of Laguiole.
The first phase of production of their whisky goes through a local raw material: malted barley, with the addition of pure water from the Aubrac plateau. After fermentation, this whisky beer is distilled thanks to the distillery's still. The alcohol obtained, titrating 68 to 70 degrees, is aged for at least 3 years... This is where whisky takes all its complexity and aromatic subtlety.
The distillerie twelve whisky innovates by using no less than 30 different types of barrels, having housed various alcohols previously (port, PX, rum...). The blends are unique, creating original whiskies and character, 100% Aubrac!
