Charles-Guillaume Simon, in the heart of Burgundy wine, gives new life to haute couture distillation. Le Clos Saint Joseph offers exceptional products made from a very high quality raw material and a German copper still delivering precise and pure distillation. The production is on a human scale, without inputs, to ensure a very high quality. Charles-Guillaume, at the head of this family adventure, first lived a life as a financier in the wine world, before flying on his own wings to found this Murisallian distillery from scratch. Pragmatic and meticulous, he trained with the best distillers, in Cognac or Grasse, obtaining at the end the prestigious title of master distiller. Its German still, magnificent in its historical brass, is a model of precision. It is necessary to see on site Charles-Guillaume refine the temperatures, judge the different cuts to keep only the best part of the distillation (the heart), then patiently raise the marcs and other fines in noble containers (barrels of Sauternes, cognac ...) for at least 5 years. The liqueurs they are the result of the maceration of very high quality fruits (meticulous sorting by the Guillaume family) macerated with care in neutral alcohol, before being distilled to extract aromas of rare purity!
