Parisian and trained biologist, Hervé Souhaut is a self-taught winemaker who fell in love with a few vineyards in Ardèche that he and his wife Brigitte took over in 1993, in the locality of Arlebosc.
The Domaine Hervé Souhaut now covers 5 hectares. On granitic soils, Hervé practices organic viticulture with soil work, minimal treatments, and manual harvesting. In the cellar, the same principle applies: minimal interventions and no oenological inputs. Depending on the cuvées and vintages, the wines see little to no sulfur. Hervé's wines are the result of a lot of empiricism, experience, and observation, giving rise to pure, fresh, and digestible wines, focused on tension and balance.
