Pascal Doquet, a very modest artisan winemaker, whose talent - long admired by only purists - is now highly acclaimed! Based in Vertus, Pascal cultivates beautiful vineyards in the Côte des Blancs region using organic farming methods, particularly in Mesnil sur Oger (grand cru) and Vertus, Bergères les Vertus, and Mont Aimé (premier cru). The focus is on crafting delicious, expressive, and devilishly gourmet blanc de blancs (Chardonnay)! The winemaking process is meticulous, using oak barrels for fermentation and cellar aging is typically extended to enhance complexity and aromatic concentration. These are refined, rich, and generous champagnes that sometimes evoke the Jura style with their very long aging process. Precision is key here, and Pascal tends to his 8 hectares of vineyards like a garden!
