Domaine Dubuet-Boillot

Maxime Dubuet-Boillot is a dynamic and passionate young winemaker, a member of the new wave of Volnay winemakers bringing a breath of fresh air to Côte d'Orienne viticulture. While Maxime has always been surrounded by a family of winemakers, his journey began with a first career as an automotive mechanic.

Grandson of a farmer and son of a Volnay winemaker, Maxime later felt the desire to take up the family legacy, with the help of his uncle, a winemaker in Volnay. He then took over 5 hectares of vineyards in Volnay and embarked on significant work in the vineyard to reintroduce organic practices and soil work. In the cellar, Maxime is also in charge, making his own choices with minimal intervention, limiting extractions and the use of sulfur.

He also experiments with whole cluster fermentation, following in the footsteps of his grandfather Pierre Boillot. A young talent from Volnay who is destined for success, given the quality of his first vintages in 2019 and 2020, all characterized by harmony, elegance, and drinkability.
