This grape variety finds its apogee in yellow wines: they are wines aged in barrels for 7 years "under sail". By undergoing sparing oxidation, these wines can be kept for decades in bottle. Less known, the "ouillés" wines made from Chardonnay, Savagnin or a blend of the two grape varieties are very interesting and will go perfectly with Comté the other great local specialty. A magnum from the Côte du Jura or a magnum from Arbois, because of their power and tension, will also accompany a slightly spicy Asian cuisine.
The Jura is also today a real experimental laboratory for a whole new generation who follow in the footsteps of one of the wise men of "natural" wine, Pierre Overnoy. The small size of the estates and a growing international demand make many bottles produced in this region rare and precious: a magnum of Jura wine will be even rarer!
