This Savagnin from Domaine Grand, vintage 2017, embodies the power and authenticity of the Jura region. Made from 40-year-old vines planted on gray marl soils, this great white wine is vinified without topping up, at high natural maturity, following traditional methods.
After a double natural fermentation, it is aged for 1 year in tanks, then 4 years in oak barrels in a semi-buried, dry cellar designed to promote controlled oxidative evolution. No sulfite adjustments, no fining, just a coarse filtration: everything is designed to preserve the purity and concentration of the wine. Over 30% of losses during aging demonstrate the pursuit of quality over quantity.
This untopped wine expresses a beautiful aromatic complexity, evoking typical notes of yellow wine (walnuts, spices, curry), while maintaining great freshness and mineral tension. It pairs beautifully with dishes featuring morels, trout, or aged cheeses from the Jura region.
