An architectural jewel of Burgundy's wine region, the Cellier aux Moines is one of the oldest wine estates in the area. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure have been preserved over the centuries. During the French Revolution, the estate was requisitioned and sold to a family who kept it for two centuries, until the Pascal family acquired it in 2004. The Pascal family initiated a comprehensive restoration program for both the Cellier and the vineyard. A new winery was built, equipped with state-of-the-art facilities to precisely vinify wines while preserving the authenticity of their terroir. Particularly noteworthy are the iconic vineyards: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru of Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate spans 10 hectares, all cultivated using biodynamic methods. Another unique feature is the total absence of pumping during winemaking, thanks to a gravity-fed winery spread over four levels. The guiding principle for wine quality is "Simplex Natura" (Let Nature do its work).

This Magnum of Puligny-Montrachet 1er cru Les Pucelles 2014 from Domaine du Cellier aux Moines comes from a mythical plot in Puligny, located just a few dozen meters from the grand cru Montrachet. Here, we are in the realm of the finest terroirs of the Côte de Beaune for Chardonnay. The Cellier aux Moines plot is situated in the heart of Les Pucelles, with vines planted in 1970. The wine is aged in barrels, including 50% new oak, for 20 months. The oak influence is perfectly integrated thanks to large 400-liter barrels, giving a silky texture to this cuvée. This 2014 vintage is vibrant, with a mineral backbone that bottle aging has beautifully refined, adding notes of apricot, quince, and butter pastry. The balance is perfect, and the freshness is still intact!
