Originally from Paris and trained as a biologist, Hervé Souhaut is a self-taught winemaker who fell in love with a few vineyards in Ardèche, which he took over with his wife Brigitte in 1993, in the locality of Arlebosc. The estate now covers 5 hectares. Working on granitic soils, Hervé practices organic viticulture with soil cultivation, minimal treatments, and manual harvesting. In the cellar, the same principle applies: minimal interventions and no oenological additives. Depending on the cuvées and vintages, the wines see little to no sulfur. Hervé's empirical approach, experience, and observation allow him to create pure, fresh, and digestible wines, characterized by tension and balance.
This Magnum of Wine from France Ardèche Romaneaux-Destezet by Hervé Souhaut is an original and atypical cuvée thanks to its blend of Viognier/Roussanne, two aromatic grape varieties that complement each other. Aged for 1 year in oak barrels without sulfur additions, the expressive nose reveals white flowers and stone fruits (peach, apricot). The palate offers superb freshness with a mineral, saline profile framed by the ripe and aromatic notes of the two grape varieties (exotic fruits, melon, citrus). A touch of white pepper on the finish definitively convinces us! A superb wine to better understand the quality of the Rhodanian white grape varieties, all without sulfur!
