Alambic Bourguignon

The Bourguignon still is a distillery launched in 2019 by Mathieu Sabbagh, a passionate enthusiast of spirits of all kinds. After a first career in the alcohol & spirits trade, Mathieu found the opportunity in 2019 to acquire a historic distillery in Burgundy, that of the Pigneret family. He then set out to revive the business and perpetuate the great tradition of itinerant distillers. With its headquarters based in Beaune, the Bourguignon still sources the finest lees and grape pomace from the local winemakers. To do this, the teams of the distillery move from November onwards to the villages in the region to distill on-site the finest raw materials. In addition to the traditional fine and marc de Bourgogne, Mathieu Sabbagh locally produces a Gin and a Pear spirit that have been very successful!
