The beautiful municipality of Riceys, in the south of the wine-growing Champagne region, has the privilege of being the only one to have 3 designations including rosé and coteaux champenois, in addition to Champagne. It also has the privilege of having Olivier Horiot among its ambassadors. When he took over the family vineyards in 1999, he immediately stood out from the traditional Champagne style by choosing to cultivate multiple designations on the same plot, playing with different exposures and soil types.
In addition to this, a return to mixed farming - well ahead of others - with the reintroduction of cows and horses. Organic farming has been practiced here since the 2000s - a pioneer in Champagne! - and biodynamic farming since 2002. These methods are based on observation and often far from common beliefs, such as long barrel aging. Olivier Horiot is an observant, sensitive winemaker who knows how to make decisions by combining natural instinct and experience.
