The beautiful town of Les Riceys, south of the vine Champagne, has the privilege of being the only one to have 3 appellations with rosé and Coteaux champenois, in addition to Champagne. It also has the privilege of counting Olivier Horiot among its ambassadors. When the family vines were taken over in 1999, he immediately detached himself from Champagne classicism, choosing to cultivate several appellations on the same plot, playing on exposures and soil types.

Added to this is a return to polyculture - well before the others - with the resettlement of cows and horses. Organic here has been practiced since the 2000s - a precursor in champagne! - and biodynamics from 2002. Methods based on observation and often far from received ideas, for example on long aging in barrels. Olivier Horiot is an observant, sensitive winemaker who knows how to make decisions by combining natural instinct and experience. An experience that translates into bright wines like a regenerating fountain of youth.
