Don't call him a natural or organic winegrower, that would be too simplistic. Despite his family origins.
A man who started from almost nothing - without a vineyard inheritance - but with determination and perseverance managed to establish his wines in the closed circle of great Burgundy wines. Particularly adored in Asia where Philippe's wine style complements the local cuisine.
Nothing was guaranteed in Burgundy because Philippe Pacalet comes from Beaujolais where he honed his skills under the guidance of Marcel Lapierre, from 1985 to 1991. Then came the encounter with Henry-Frédéric Roch who hired him to manage the winemaking at Domaine Prieuré-Roch. Wines that have become legendary since then ... In 2001 came the brilliant idea to create a high-fashion wine merchant, a model that was not very popular at the time. Philippe Pacalet set out to find the best terroirs and grapes, a process that has since inspired many others.
Without dogmatism, his style is also original and outside of trends since it has remained unchanged from the beginning.
In simple terms, whole cluster fermentation with little sulfur and no new barrels. The result: wines with finesse and elegance, never aiming for opulence or concentration, rather focusing on balance and aromatic qualities. The tannins are integrated, with minimal extraction and never heaviness in the wines. One can almost grasp the ideal vision of a voluptuous and airy Pinot, with intoxicating aromas.
