A brand new domain with 2020 as the first vintage for Bastien Gautheron, a former viticulture student from Beaune who previously honed his skills at Olivier Leflaive. Bastien is part of this generation of young winemakers seeking to convey the terroir-vine link through a minimally interventionist winemaking approach. His winemaking process remains very simple, with relatively quick maceration and fermentation to avoid over-extraction. Flexibility and responsiveness are achieved through the use of small 15 HL stainless steel tanks, cooled only during the crushing. The grapes are then minimally or not at all manipulated, allowing the temperatures to naturally rise with fermentation. Extraction is limited to two punch-downs before the start of alcoholic fermentation to avoid excess oxygen (and thus the risk of too-rapid fermentation). The rest of the process involves only pump-overs, one per day. All the wines are aged in barrels, with the oldest ones dating back to 2014; a portion of each white cuvée is aged in 350 L barrels (from 2017) to maintain maximum precision without altering the wines with too much oak. The reds are polished and enhanced by a few new barrels (less than 30% in all cases), all with very light toasting. In terms of viticulture, the Savigny and 50% of the Bourgogne Hautes Côtes de Beaune are from Bastien's own vineyards, which have been certified organic since 2017. The other grapes come from trusted viticulturists (mostly friends of Bastien), practicing organic or similar methods.
