A very recent estate with 2020 as the first vintage for Bastien Gautheron, a former winemaker of Beaune who previously cut his teeth with Olivier Leflaive. Bastien is part of this generation of young winegrowers seeking to transcribe the terroir-vine link through a vinification that is not very interventionist. His approach in winemaking remains very simple, maceration and fermentation relatively fast so as not to over-extract. Flexibility and responsiveness thanks to the use of small stainless steel tanks of 15 HL, cooled only during vatting. The grapes are then little or not handled at all, temperatures rising naturally with fermentation. The extraction is limited to two punching before departure in alcoholic fermentation to avoid a surplus of oxygen (and therefore a risk of fermentation very too fast). The rest is done only by reassembly, at the rate of one per day. All the wines are aged in barrels, the oldest are from 2014, part of each white cuvée is aged in 350 L barrels (aged 2017) in order to keep maximum precision without distorting the wines by the woody. The reds are patinated and magnified by a few new barrels (less than 30% in all cases), all on very light heats. In terms of viticulture, Savigny and 50% of Burgundy Hautes Côtes de Beaune are from Bastien, the plots have been certified organic since 2017. The other grapes are all from trusted winegrowers (mainly friends of Bastien), in organic viticulture or similar organic.
