In the Alpilles, Dominique Hauvette is a leading winemaker. Since establishing herself in 1988 on the clay-limestone soils of Saint-Rémy-de-Provence, she has always been demanding in her choices of viticulture (biodynamics since 2003), vinification (destemming and berry infusion), and aging (tank, large wooden vat, barrel, concrete egg), respecting the soils and the authenticity of her terroirs.
Her sensitivity is expressed through cuvées full of life, elegant, and rich in detail like the intense Cornaline and fragrant, remarkably fine Améthyste. Gently pressed with whole clusters, the whites are superb, with a rich texture and noble, mouthwatering bitterness. The wines age with impressive grace. 2020 is the crowning achievement for Dominique Hauvette as she is elected "Winemaker of the Year" by the Revue des Vins de France. Well deserved!
