In the Alpilles, Dominique Hauvette is a leading winemaker. Since its installation in 1988 on the clay-limestone soils of Saint-Rémy-de-Provence, it has always been demanding in its choices of viticulture (biodynamic since 2003), vinification (destemming and infusion of berries) and aging (vat, lightning, barrel, concrete egg), respecting the soils and the authenticity of its terroirs.
His sensitivity is expressed through vintages full of life, racy, all in relief like the intense Carnelian and Amethyst, fragrant and a remarkable finesse. Pressed delicately into whole bunches, the whites are superb, fat with noble and salivating bitters. The wines age with impressive grace. 2020 is the consecration for Dominique Hauvette since she is elected "winemaker of the year" by the Revue des Vins de France. Richly deserved!
