Alexandre Bain studied at the Viti de Beaune and then bought a few hectares in Pouilly-Fumé in 2007.
He immediately decided to cultivate the vines biodynamically, with the help of animal traction for the work of the vine and a minimum of interventions (without inputs) in the winery.
Unlike his neighbours, Alexandre Bain harvests grapes at optimal ripeness. The pneumatic pressing lasts a very long time (several hours), Alexandre Bain then vinifying the different presses separately. The fermentations are done under indigenous yeasts and the aging takes place in different containers (stainless steel, wood, ceramics ..). The duration of these depends on the vintage, Alexandre learned from Didier Dagueneau the interest of long aging (minimum 18 months).
The wines no longer see any suffering at all (with very rare exceptions) and are neither filtered nor glued. The wines produced are fruits of their terroir and transcend the varietal aromas of Sauvignon Blanc: clean, sharp, highly expressive and devilishly greedy juices.
