Laurent Mouton represents the fourth generation of this family of winegrowers. When he took over in 2000, he undertook many changes to the estate to refine and specify the methods in the vineyard and in the winery. In the vineyard Laurent leads a reasoned fight against the predators of the vine, regular ploughing of the soil and limitation of yields to obtain optimal maturity. The harvest is manual and the grapes sorted and destemmed before being aged for 12 months in oak barrels. The wines are every year among the best value for money in Burgundy.
