Established in 1995 through the collaboration of two former winemakers in Bordeaux (Karl Manguin from Latour and Basile Saint Germain from Haut Brion), Domaine Les Aurelles has over time become one of the most renowned estates in Languedoc. This comes as no surprise when considering the meticulous work carried out with the highest level of standards by Basile Saint Germain and his wife Caroline.
Located in Caux near Pezenac (Languedoc), the estate cultivates 15 hectares of vineyards spread over 5 plots. The grape varieties grown are classic for the region: Grenache, Mourvèdre, Syrah, and Carignan for reds, and Roussanne, Clairette, Terret Blanc, and Ugni Blanc for whites. The primary requirement is drastically limited yields of 25 hl/ha and the complete absence of chemical products (no fertilizers, herbicides, or pesticides) since its inception. The wines see minimal oak barrels and undergo lengthy aging. They are unfiltered and only released for sale when they are ready to deliver their best. Everything here is about harmony, elegance, and aromatic subtlety, a true masterpiece!
