This grape variety reaches its peak in yellow wines: these are wines aged in barrels for 7 years "under a veil". By undergoing a controlled oxidation, these wines can be kept for decades in the bottle. Less known, the "ouillés" wines made from Chardonnay, Savagnin, or a blend of the two grape varieties are very interesting and will pair beautifully with Comté, another local specialty. A magnum of Côte du Jura or a magnum of Arbois, due to their power and tension, will also pair very well with slightly spicy Asian cuisine.
Today, the Jura is also a true experimental laboratory for a whole new generation following in the footsteps of one of the wine "natural" sages, Pierre Overnoy. The small size of the estates and a growing international demand make many of the bottles produced in this region rare and precious: a magnum of Jura wine will be even rarer!
