No chemicals are used in the vineyard, which is planted with beneficial plants for biodiversity. The soils, composed of clay and flint, rest on a white and soft limestone rock, allowing the roots to delve deep.

The vines, aged 30 to 100 years old, are hand-harvested, ensuring high-quality Chenin Blanc grapes. After gentle pressing, the juice naturally ferments in large wooden barrels, a process that can take up to six months. Aging on fine lees adds complexity and additional richness to the wine.

This Montlouis Les Choisilles 2019 pairs perfectly with dishes such as sautéed shrimp, lobster, cod, sea bass, poultry, and goat cheese. To fully appreciate its aromas and freshness, it is recommended to serve it at a temperature of 10-12°C.
