Wilfried Valat settled in Calce, in the heart of Roussillon, in 2007, with the initial goal of offering wines different from the local classics. Here, no yeasts, no large-scale production, no harvesting machines, and no acidification of wines. Wilfried aims to deliver natural wines, without additives or manipulation. In another life, this determined and passionate man was a biochemist based in Dijon, Burgundy. His goal: to apply Burgundian principles to the magic of these Catalan terroirs. A bold and crazy challenge! The domain La Nouvelle Donne was born: the perfect encounter between a magical place, on the heights of the Col de la Done, at an altitude of over 300m. Wilfried identified exceptional plots with different climates: Clos de la Serre, Clot de l'Olby... a parcel approach that fits perfectly with his organic vineyard practices. Similarly, the grapes are all handpicked, and the aging process is done without additives, in demi-muids or large oak vats (without new barrels). The wines are smooth, deep, and very original in their aromatic profile. They reflect the freshness of the altitude of these terroirs, from which the old vines draw all the aromatic complexity of this unique place. A must-try!

This magnum of red wine Vin de France Kashmir 2018 from La Nouvelle Donne is a unique wine far from the standards of Roussillon. Wilfried markets it as a Vin de France to break free from local dogmas. The grapes are hand-harvested, vinified without sulfur, aged in stainless steel tanks and barrels for 1 year. Bottled without fining or filtration. A surprising wine with finesse and freshness, almost Burgundian in profile but 100% Carignan. An infusion of fresh and tangy red fruits (strawberries, raspberries, blackberries) with a strong tangy intensity and very little sulfur. A burst of fruit with sharp acidity, impressive considering the sun-drenched production location. Impressive! Decant for a few minutes to eliminate the natural effervescence resulting from this natural winemaking process.
