Magnum Champagne Grand Cru Extra Brut Terroirs (blanc de blancs) - Pascal Agrapart

For 4 generations, the Agrapart estate has been a grower-producer (no grape purchases) in Avize in the Côte des Blancs. A vineyard of 12 hectares, including 9.5 hectares of Chardonnay in Avize, Oger, Cramant, and Oiry - Grands Crus of the Côte des Blancs. Pascal Agrapart carves the facets of the same diamond with crystalline wines that define its state. His tools are presses, tanks, and barrels with which he tells a story that evokes magical plots. A work of artistry that stands out from a Champagne tradition focused on blended wines. Pascal is indeed a pioneer in understanding soils and exposures. He stopped early on using herbicides in this regard. For him, having living soils is essential. In the winery, fermentations are spontaneous, and the choice of aging clearly favors oak barrels.

This Magnum Champagne Grand Cru Terroirs by Pascal Agrapart is a 100% Chardonnay, a blend of the grand cru terroirs of Avize, Oger, Cramant, and Oiry, aged between 32 and 44 months on fine lees. The dosage is low, less than 5g of sugar per liter, and the same for sulfur (less than 50 mg per liter). Crystalline freshness, pure, fine palate, defined by a mineral water rockiness. Pascal's expertise then unfolds in dry extracts with noble notes of almond and fresh walnut, the result of a very high-level aging on fine lees.

For what occasion? Fish tartare, shellfish and crustaceans, grilled fish. Japanese cuisine can also work well.
