Aurélien Febvre, an oenologist by profession, has undertaken the superb project of rehabilitating a centuries-old vineyard, that of the Auxois, to the west of Dijon. A vineyard that already existed during the time of the Court of Versailles. Following wars, phylloxera, and rural exodus, this vineyard was severely affected and fell into oblivion in the 19th century. Thanks to the dedication of a few winemakers, the obtaining of the Protected Geographical Indication in 1996 gives a rebirth to the Côteaux de l'Auxois. Aurélien Febvre operates 2 hectares of old vines there, using organic farming methods. His wines are expressive and harmonious, and his aging processes are original, using stoneware jars to avoid influencing the aromatics of his wines and to preserve freshness and fruitiness.

This Magnum of IGP Côteaux de l'Auxois from Domaine Aurélien Febvre is an expressive and indulgent Chardonnay. A nose full of fruit combining citrus and peach. Mineral note and light floral hints. The palate is rounded with a fruity structure. Harmonious, easy to drink, and fresh. Perfect as an aperitif.
