This family-run house, established in Rilly-la-Montagne (Montagne de Reims) since 1890, is now led by Laurent Champs. Trained at the estate by his father, René, this avid traveler took over the 11 hectares of the estate at the age of 24 in 1995. He has a vision of diversity, a concept of difference, and inherits a pioneering spirit. His father already vinified everything in large oak casks, plowed and worked the soils. Preserving biological life and terroir identity is part of the family spirit. With the idea of making wines before making bubbles, Laurent likes to maintain the vintage effect and seeks out fine, elegant, and precise champagnes. Malolactic fermentations are blocked to retain freshness and tension. The house style offers a demonstration of elegant classicism resulting from long aging in the cellar.

This Magnum of Champagne 1er cru Grand Cellier from Maison Vilmart (based on the 2018 vintage) stands out for its calm and steady effervescence, with very fine bubbles. The expression is floral (honeysuckle, lilac) with hints of citrus on a touch of fresh butter and sour cream. After a few minutes of aeration, the aging notes appear and enrich the whole. The wine then expresses spicy notes of ginger and lemongrass. Particularly notable is the very good acidity that maintains interest throughout the tasting. These various sensations create a creamy and harmonious overall texture. The finish is precise, slightly mineral, and long. The last impression evokes grapefruit and leaves the memory of a dynamic and vigorous wine.

For what occasion? At the table, it is best to seek harmony with dishes of tender texture. Think of sole or turbot with short sauces, or shellfish such as oysters. This champagne can also be easily enjoyed as an aperitif.
