The Côte de Beaune appellation is not well-known because it is very small (52ha in total), but the quality of this ancient vineyard is remarkable. As evidence, this climate "La Grande Chatelaine," a renowned wine from Emmanuel Giboulot, who cultivates 30-year-old vines there using organic farming practices. Fermented and aged in oak barrels for 12 months, this chardonnay is fruity, saline, and delightfully gourmand, with notes of white and yellow fruits. The balance is perfect, and its drinkability is remarkable, all without any additives except for a very low dose of sulfur to stabilize the wine before bottling.
