Architectural jewel of Burgundy's vineyards, Cellier aux Moines is one of the oldest wine estates in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure have been preserved to this day. During the French Revolution, the estate was requisitioned and sold to a family who held onto it for two centuries until the Pascal family acquired it in 2004. The Pascal family initiated an extensive restoration program for both the Cellier and the vineyard. A new winery was built with state-of-the-art facilities to vinify wines with precision while preserving the authenticity of their terroir. This includes iconic vineyards: 5 hectares of the famous Cellier aux Moines enclosure, a historic premier cru in Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated using biodynamic methods. Another unique feature is the absence of pumping during winemaking thanks to a winery designed on four levels for total gravity flow. The motto guiding the wine quality is "Simplex Natura" (Let Nature Do Its Thing).
This Magnum of Puligny-Montrachet 1er cru Les Pucelles 2019 from Domaine du Cellier aux Moines comes from a mythical plot in Puligny, located just a few dozen meters from the grand cru Montrachet. This is where the most beautiful terroirs of the Côte de Beaune for Chardonnay are found. The Cellier aux Moines plot is located in the heart of Les Pucelles, with vines planted in 1970. The wine is aged in barrels, 50% of which are new, for 20 months. The oak influence is perfectly integrated thanks to large 400-liter casks, giving a smooth texture to this cuvée. The 2019 vintage benefitted from excellent sunshine, resulting in perfectly ripe grapes. The resulting wine is marked by remarkable brightness and tension. A touch of generosity with citrus and mineral notes on the nose. The palate strikes a balance between power and finesse, with a long, flinty finish. Truly elegant!
