This magnum of Côte Roannaise Éclat de Granite 2023 from Domaine Sérol reflects rigorous biodynamic viticulture led by Stéphane and Carine Sérol on a 38-hectare family vineyard. Certified by Biodyvin, the domain aims for the optimal grape maturity through environmentally friendly and soil-respectful viticulture. This emblematic cuvée is a blend of parcels from granitic slopes, planted at high density (8,500 vines/ha), and harvested manually in crates.
The grapes, carefully sorted on a vibrating table, ferment slowly for 15 to 18 days in cement vats, with 25% whole clusters to preserve the fruit's authenticity. The aging takes place in cement vats for 6 to 10 months to maintain the cuvée's freshness and energy.
The result is a wine with irresistible indulgence, featuring infused red fruit notes — wild strawberry, raspberry, cherry — accented with a hint of spices and a touch of elderflower. In the mouth, the texture is juicy, crunchy, with a firm structure, and extends to delicately smoky and peppery hints on the finish. A truly pleasurable wine, to be enjoyed simply, with friends, at any time!
