Originating from a historic estate founded in 1130, the Givry Clos Pascal Monopole from Cellier aux Moines embodies the excellence of Burgundian pinot noir. Managed by the Pascal family, this 30-are vineyard, situated on clay-limestone and stony soil, benefits from an ideal microclimate thanks to its south-facing exposure and natural ventilation.
2018 Vintage: Despite a hailstorm in May, the favorable summer climate led to exceptional grape quality. Biodynamic practices, rigorously applied, and special attention to the vineyard, have contributed to a remarkable fruit balance.
Pure Vinification: The minimalist philosophy in winemaking highlights the purity of the fruit. After a low-temperature maceration, natural fermentation begins, followed by aging in oak barrels for 18 months, then refining in tanks, ultimately fully expressing the finesse of the terroir.
