

Magnum Champagne Jacquesson Cuvée DIZY Corne Bautray 2014
A high slope terroir, 100% Chardonnay
From a one-hectare plot planted in 1960, "Corne Bautray" overlooks Dizy on a steep southwest-facing hillside. The soil, clay mixed with millstone pebbles resting on Campanian chalk, gives rise to a Blanc de Blancs with rare tension and minerality.
Vintage 2014 & custom aging
Harvested on October 2, 2014 (12.30% vol., acidity 6.3 g/L), the grapes are gently pressed, then ferment and mature for a long time in oak vats, without filtration or fining. After nearly nine years on lees, disgorgement takes place in February 2024 with a minimal dosage of 0.5 g/L (Extra-Brut). Production is limited to 5,680 bottles and 300 numbered magnums.
Aromatic profile
Appearance: pale yellow, fine and silky bubbles.
Nose: linden, ripe citrus, fresh almond, chalky touch.
Palate: lively attack, creamy texture, vibrant salinity, and endless finish on lemon zest and flint.
Food pairings
Perfect with scallop carpaccio, roasted turbot with hazelnut butter, or aged Comté cheese; it will also enhance a truffled veal tartare with its depth and precision.
The 1.5 L ensures a slower and more harmonious aging: the aromas gain complexity while the bubbles become more delicate, ideal for a calm aging of ten years or more.
