Aurélien Febvre, a passionate oenologist, undertook the ambitious project of restoring the old vineyard of Auxois, located west of Dijon. This vineyard, recognized since the time of the Court of Versailles, has overcome historical challenges such as conflicts, phylloxera, and rural depopulation to be reborn thanks to the determination of winemakers and the IGP designation in 1996. Cultivating 2 hectares in organic agriculture, Febvre produces characteristic and balanced wines, using stoneware jars for vinification that preserves the aromatic integrity and fruit liveliness.
This Magnum of IGP Côteaux de l'Auxois Terre de Thorey Sauvage from Domaine Aurélien Febvre is a greedy and juicy wine, with red fruits (blackcurrant, raspberry, ripe) and spices. Aged in earthenware jars, the Pinot Noir grape variety expresses itself freely here without wood influence. A clear and pure wine with fine tannins and a beautiful tangy freshness. Beware, it's highly drinkable!
