Michel Couvreur was a pioneer in aging Scottish whiskies in France using original containers (Sherry, Port, yellow wine...). Settled in Burgundy as a wine merchant, he established his aging cellar in Bouze-les-Beaune, in a highly humid cellar. Michel Couvreur's motto, who passed away in 2013, but whose tradition lives on thanks to his family and his cellar master Jean-Arnaud Frantzen, was: "Whisky is the fertilization of a cereal distillate by oak wood intensely impregnated with the flavors of great wines."

This Magnum of Pale Single Malt from the Couvreur house is the perfect illustration of this philosophy. It is a single malt aged for 12 years in Amontillado sherry casks in Burgundy and slowly reduced to 45% with Scottish water from the Pentland Hills. Drawn from a very rare peak of the hierarchy of woods at the beginning of their penetration by the raw distillate, it reveals floral and fruity notes, slight bitterness, and a hint of iodine, all with an impressive length.
