Aurélien Febvre, a trained oenologist, undertook the magnificent project of rehabilitating a centuries-old vineyard, that of the Auxois, west of Dijon. A vineyard that already existed during the time of the Court of Versailles. Following wars, phylloxera, and rural exodus, this vineyard was severely affected and fell into oblivion in the 19th century. Thanks to the dedication of a few winemakers, obtaining the Protected Geographical Indication in 1996 revived the Côteaux de l'Auxois. Aurélien Febvre cultivates 2 hectares of old vines there, using organic farming methods. His wines are expressive and harmonious, and his aging techniques are original, using stoneware jars to avoid influencing the aromatic profile of his wines and to preserve freshness and fruitiness.

This Magnum of IGP Côteaux de l'Auxois Terre de Thorey Sauvage from Domaine Aurélien Febvre is a flavorful and juicy wine, with red fruits (blackcurrant, raspberry, ripe) and spices. Aged in earthen jars, the Pinot Noir grape variety expresses itself freely here without the influence of wood. A clean and pure wine with fine tannins and a beautiful tangy freshness. Beware, it's highly drinkable!
